The most common way to group different varieties of tea is by the category of processing method with which they are produced. Some call it Tea Classification, others Tea Categorisation. We think the later label is semantically more accurate.

Many connoisseurs and tea specialists organise their collections with this concept.

    Beautiful amber color

    I get great satisfaction comparing the dry bark-like strands to the plump infused leaves that grow and expand, coming alive in the gaiwan. For an American who is used to powder in a tea bag, this is quite an epiphany. I can never go back to tea bags now. Tea Hong has spoiled me forever. The fragrant taste on the upper palate and into the nasal area is a religious experience.

  • Orchid Gratus 2017

    Elegant, complex fragrance

    The first time I had this tea I used the standard infusion parameters. It came across like the Snow Orchid, unsurprising as they are both categorized as bouquet Phoenix oolongs. But from smelling the infused leaves, I can tell that this Orchid Gratus is gravitating towards the traditional Phoenix style. The infused leaves also shows more oxidation than Snow Orchid.
    Then I tried it with 4g/100ml in 40 seconds. Wow, it reminds me of the Big White but without the faint sweet potato/peach aroma, yet somehow more complex. Smelling the tea is like smelling a good perfume, it is almost like there are many different fragrance combined together in a cup of tea. I’d say the aftertaste is not long, therefore I would twirl the tea in my mouth a little bit longer before swallowing it to enjoy the beautiful fragrance.

    Like return to old days

    This guanyin like I drank with father when I was a boy. Sweet memories total recalled. I search east and I search west, until I found this. Very delicious good taste

  • Silver Curls 2018

    Nice balanced Chinese green tea

    Silver Curls Spring has an appearance of light green and silver curls. The description states that this is a more mellow green tea with a slightly sweet aftertaste. I think that description is accurate. In many ways this tea reminds me of some other green teas I have had, but a finer quality, and the appearance is nice. It shows the careful work put into making the tea. Like Tianshan April Mist, this is also a quite refreshing tea, but due to its balance and poise, rather than its strength and brightness. The aftertaste is a little soft and sweet. The taste is a little reminiscent of a softer and cooler Longjing. This strikes me as an excellent overall representative of a refined and classic Chinese green tea. On a personal note, it is also the type of tea that I would enjoy on a daily basis.
