Selection by Tea Category

The most common way to group different varieties of tea is by the category of processing method with which they are produced. Some call it Tea Classification, others Tea Categorisation. We think the later label is semantically more accurate.

Many connoisseurs and tea specialists organise their collections with this concept.

    This beautiful dancong has what, to me, is the perfect balance of sweet and bitter, with an enticing mouth feel and a lingering, tongue coating taste. The citrus bite is very apparent and pleasing.

  • Dianhong Classic 2017

    Complex and Unusual

    Acquired tastes can be perplexing or intriguing, depending on your viewpoint. Count me as intrigued after sampling a pre-release packet of Dianhong Classic. The dry tea leaves have a strangely pleasant aroma of roasted cashews and aged cheddar. When infused, the scent transforms into something altogether different, vaguely akin to the fragrant flower, Freesia. Drinking this tea gives yet a third impression, the hardest of all to describe. To my western palate, it’s like stepping onto the moon – uncharted territory and taste adventure combined. Is it blood orange or river stone? Bittersweet or crystalline? I cannot describe this unusual, slowly unfolding taste. Thank you for the opportunity to sample one of the teas from your new line. For me, Dianhong Classic is a riddle that may never be solved.

    喜出望外

    我以前以為自己飲咗咁多年功夫茶,有咩好野未試過﹗今次試宋種真係喜出望外。第一,呢隻茶層次多(不過都唔容易沖,我都反覆實驗過几種沖法,又用蓋碗又用茶壺。但係咁樣試吓都係茗茶既樂趣之一),味道清得黎回酣長。第二係佢「襟」飲,即係沖五、六泡都可以(我用7至8克茶葉),而且連續几日飲宋種都唔會覺得厭。咁計返條數其實都好抵飲。不過鍾意炭火味既人可能一開始個時唔係咁適應。但呢隻茶絶對係好野,應該試﹗要畀滿分﹗

    Here is how you put on the handle

    Here is how you can get the handle hooked into the pot:

    1. Click one end of the hook into one of the handle holes
    2. Press the end of the handle that is already in the hole with one or two fingers quite firmly and the rest of your palm pressing on the body of the pot
    3. Using your other hand, direct the other end of the handle to the other hole; it would seem too short now
    4. Hold the handle by the open end firmly, leaving the hook open and aligning the open hole
    5. Pull the handle wide enough to let the hook reach the hole; click into it and release

    The design makes use of the springy character of this steel to simplify the profile of the shape of the pot.
