The chahai is a relatively recent invention. First seen in Taiwan in the 1980’s in gongfu tea-making, it quickly spread to the rest of the world. When tea is made in smaller vessels, the density of the tea liquor can vary quite dramatically between that portion that is first decanted and that of the last. A chahai serves as an intermediate teapot in which the concentration of each infusion is even up before decanting into serving cups. A chahai is, therefore, a tea decanter.
