Revitalising an old yellow tea
Tea Hong’s Mo Gan Yellow Snails is a break away from the old Mo Gan Yellow Tip. We have greatly modified traditional yellowing to give the tea a distinctive yellow look and a taste that is different from both green tea and old style yellow tea. A neo-yellow.
Unlike other tea categories, old style yellow tea has not prospered in all these decades since tea’s revival after the destructive Mao era. Its taste needs a lot more to create followers.
Similarly from the mountain of Mo Gan in the region of Zhejiang, Tea Hong’s Mo Gan Yellow Snails has departed from the dull colours of the old to maintain a brisk freshness in the look and taste, while achieving a characteristic “cooked” warmth and sweetness that is the real spirit of yellow tea. Now that is a good individualistic character to have a place in any tea repertoire.

Taste profile
Nose: Freshly baked biscuit with a hint of sweetness from chestnuts over a floral undertone. Palate: Soft, yet full, umami body accented with light malty sweetness. Just enough bitter bite gives the whole profile a healthy backbone. Finish: Gentle yet persistent aftertaste.
Infusion tip
Infusion duration is proportional to both the thickness of the liquor and the depth of the umami. To lower the slight bitterness that comes with it, try decreasing the infusion temperature or use a Yixing teapot. However that will inevitably lower some of the aromatic qualities. If you are a diehard tea fanatic and enjoy the extra touch of tinkle like I do, a thick enough porcelain small vessel infusing at 90°C delivers the real gastronomical height of this rare tea.

This tea may have the same name as some low quality tea used in dimsum restaurants but it certainly tastes differently. It is the ORIGINAL Shuixian, the famous oolong that grows on dark rock cliffs in the depth of Wuyi Mountains. Narcissus Classic, like most other deeper baked oolongs, goes well with a wide range of cuisines and desserts and is a great digestive. Also an adaptable tea for preparation with other ingredients, such as ginger and raw sugar, and a safer tea for the weaker stomach.

Huangshan Maofeng Supreme, traditional green tea

Huangshan (translate: Yellow Mountain) is an UNESCO World Heritage Site and a China national conservation. Besides beautiful sceneries, it is also the origin for many a fine teas, such as Huangshan Maofeng. The tender young leaf shoot to make Tea Hong's Huangshan Maofeng Supreme is always plucked with one or two tiny immediate leaves before Spring Equinoix, and always before Qing Ming. Always from the few small family tea farms in the high mountains that we buy from. It is a rare quality even in the market in Huangshan, and if you ever found it, would be at a much higher price. Working directly with producers is a principal at Tea Hong. While offering quality at a reasonable price is one immediate benefit that you as a consumer can enjoy, there are more important reasons and not so immediate results that we aim at. Your patronage means great support for our cause.

The most revered amongst all Wuyi oolongs, Da Hongpao (translate: Big Red Cloak) from the pure pedigree grown in better horticultural environment mean significant difference and are most sought after. Tea Hong’s Red Cloak Grande is an extremely limited production (10 kg/year) harvested from two second generation noble breed that are over 100 yrs old in the heights of Wuyi. Masterfully processed to best deliver the taste this name represents.

Luan Guapian Supreme, traditional green tea

Unlike other green teas that are prized for plucking early in Spring, leaves of Da Guazi need to be quite grown and spread in order to make a fine Luan Guapian. This gives the proper biochemistry that yields enough pectin for the tea's signature velvety texture and unique bitter character. This is possible only with a special local cultivar — Da Guazi — Big Melon Seed, hence the funny name. Some say it takes enough experience in life for a person to appreciate the bitterness in a food or drink. We think maybe it only takes a person with a truly sensitive taste faculty to understand and prize such a wonderful tea.
