  • Taiping Houkui Traditional, green tea of shidaye cultivar

    Beautiful and smooth

    I tried a few packs the other Taiping Houkui and my girlfriend liked it. The infusion process has been a show for my friends. Therefore, when this came out, I immediately gave it a try too. The leaves do not look as spectacular as the other one, because they are not as brightly green and not as translucent thin. They are still quite neat. I forgot about it after the show in the party and yesterday I prepared it like any other green tea except perhaps a bit hotter water, the freshness and delightful flavour are really impressive. The unique high class Chinese tea qualities, such as floral, sweetness, cereal, and umami are all there, and not that seaweed taste in the other version. The most impressive part is smoothness. I don’t think I have tried any other green tea smooth like this. Also there is a velvety (?) mouth feel that is also new in green tea for me.

    This is for me the most wonderful green tea.

  • Cassia Extraordinaire, Wuyi yancha oolong

    My most expensive tea ever, and loving it!

    I should have written about a few other oolongs I tried since my happy experience with Phoenix Bittersweet, but I have to share with you this one. This is the most expensive tea I have ever bought and so pleased with it. It has a great sweet wood taste and a very interesting spice to it. Not hot or pungent or anything like that, but very memorable character. Warm, refreshing aroma and very tasteful tea. I have stopped alcohol for 6 years now, this tea is like a very fine wine, except that this keeps me sober and feeling healthy 😉

  • Eight Immortals Wudong, Phoenix dancong oolong

    I am so glad that you said this. Every year we have to spend a lot of efforts managing our sources in order to make sure they deliver their best outputs. Phoenix oolongs are amongst the most difficult ones since they are so much in high demand and the annual yield of genuine ones is small. Furthermore, Eight Immortals is not an easy tea to process well.

  • Wenshan Paochong, light style Taiwan oolong

    This is really good Baozhong, I compared it to a competition-grade version that was grown in Nangang and won second place at a tournament in Pinglin – and I have to say this one is just as good.

    First off, the leaf quality is superb. Wholesome, meticulously crafted leaves that are uniform and very consistent. They open up slowly and gradually unfurl, revealing a deep and rich, emerald-green color to the leaves. These are clearly processed well without excessive bruising. In the cup, this tea resists high temperatures well and is flexible enough to reveal deeper layers of the flavor profile whether you like brewing it with cooler temperatures or near-boiling.

    There are some differences in the cup between this and the competition-grade – this one is more floral and has a more pronounced minerality, with an aftertaste that is reminiscent of honeyed nuts – like walnuts, or almonds. It’s not as buttery or creamy, but I appreciate the depth of the rich floral notes of this one slightly more anyways, and the contrast provided by the minerality which creates a brothy quality that adds another dimension of enjoyability to the whole experience.

    There are undertones of sea plants – kombu, sea lettuce, dulse – that accentuate the minerality and add a thick umami layer to the flavor profile that is just exquisite. There’s so much going on – delicate notes of lilac that are persistent on the palate from initial sip to aftertaste, sweetness in the body across all temperature ranges, and hints of seaweed and minerality from start to finish that never become overbearing.

    I enjoy looking at these leaves after I brew them up, they are very high quality and you can tell by how glossy and plump they remain even after being pushed to the limit.
