hese leaves, the more the flavors comes out. It's much easier to under-steep than it is to over-steep.
I like how crisp, brisk, and clean this is - it opens up with bright aromatics like lemon peel or grannysmith apple, then leads into a deep, round, and smooth body that has notes of malted plums and other dark fruits, as well as hints of various woods.
Even with cooler temperatures, longer steep times work wonders to draw out the full spectrum of flavors.
The leaf quality is fantastic - large, wholesome, and uniformly processed. When they're fully opened up, you can tell the input material is high quality... the leaves are glossy and plump, even after a long bath in hot water. Show Less

The roast on Cassia Classic is apparent but not taken too far - the flavors are still soft and slippery around the edges, with a smooth texture and oily viscosity to it.
The aftertaste is nice and long-lasting. The empty-cup aroma is great, there are clear notes of cinnamon bark with hints of tangy red fruits (I get hints of sour cherries and currants).
This is certainly a good option for somebody who wants to explore the intriguing world of Wuyi oolongs, or the more-seasoned connoisseur who just wants some good rougui that doesn't break the bank.
I like to use 7 to 8 grams of leaf in my 100mL "Rural Life" gaiwan, or roughly 10 grams of leaf in a 150mL yixing teapot. Short steep times with near/freshly boiling water make for a lovely experience. Show Less

One of the reviewers below stated that this guanyin reminds him of what he drank with his father when he was a young boy. When you can drink a tea and it brings you back to your childhood, you know it's special.
Even in the modern day, this Alishan Guanyin is a refreshing (and welcome) pivot away from the green and floral-style oolongs that seem to dominate the market. Not that there's anything wrong with them, in fact there are quite a few offered by Tea Hong that are exquisite, it's just that there's something really special about a properly fired and deeply-baked oolong.
This really hugs the heart and embraces the soul. It doesn't matter if this will be your first-ever loose leaf tea, or you're a seasoned pro who knows all the famous mountains - you should definitely try this oolong. Show Less

tea drinking when I began my earlier career in teaching in the early 1980's. It was a time when mastery in tea baking was already a fading craft as the market was beginning to push for the dominance of green style oolongs. I was too young and too much an outsider to know whether it's the decrease of good baking that cause the rise of green oolongs or whether it's the push for green oolongs that dwindled the market for master tea bakers. th just a pinch of woodsy undertones to add balance to what is undoubtedly a creamy, velvety tea.
The next thing I noticed was just how big these leaves are - these are not tiny pebbles, they are more like boulders. The leaves are HUGE! As they brew up they unfurl into thick and wholesome leaves that stretch out several inches. I am very impressed by the uniformity of the plucking and processing as well. The leaves are rolled tight, but not so tight as to make them brittle.
In every aspect of the flavor profile, this tea is dripping with milky-sweet flavors that carry a kind of oily-spicy quality to it that reminds me of fennel or anise, as mentioned in the description. This adds a gentle vibrancy that cuts through the rich and decadent, milk-forward flavor profile, and creates a sense of balance that keeps this tea intriguing every time it's brewed up.
This tea is easy to brew and very forgiving, it resists turning sharp or bitter, and has lots of stamina so whether you brew it gong-fu or Western-style, you will easily get some of the best "milk oolong" you could ever hope for. Show Less

great mouth feel. The color of the liquor...just wow. It's like peach juice, or plum juice, or something like that. It's perhaps the most attractive looking liquor of any tea I have had yet. This is a tea that I would consistently keep in my personal stash at home.
I actually have a fun story about this tea! So, here in the United States, especially where I am from (Ohio), there are not a lot of people who drink tea (let alone good quality loose leaf). I am always trying to get new people into tea when I have the opportunity. Recently, an opportunity came for me to do so - I made and served tea gongfu style at a Chinese New Year event at my university's medical center that my school's Confucius Institute held. The event included several different tables set up to show off different aspects of Chinese culture. At my table, I had my gongfu setup and brewed tea for the medical students walking through the lobby. I had a sample of the Honey Orchid Supreme that I brought with me, and I pulled it out when I started to get a lot of people around my table. I brewed it up in front of everyone, showing off the beautiful color of this tea in my glass cha hai. I only had around 3g or so left from the sample, and I was worried that it would be too light. However I adjusted the timing, and when I poured some tea into my cup and tasted it, I experienced a wonderfully fruity, aromatic, and interesting flavor, very smooth. I quickly poured out some cups for others to try. The people that first tried it told me that they were amazed that tea could taste like that, and that they had no idea tea could be so naturally fruity and delicious! These people had most likely only ever had tea bags before, so this tea really amazed them. Some people that I handed the tea to stood by the table and talked with me for more than an hour, asking me about the tea and about how they could do this at home. I was able to introduce several people to the work of good quality tea this way, and I made sure to let them know where I got the tea - Tea Hong. I hope these people got inspired to go home and start exploring the world of tea and gongfu brewing, and perhaps they will order some tea from Tea Hong and be wowed some more 😉
Anyway that's my story, I hope it wasn't too boring 😉 I was able to share the experience of tasting great quality tea with these medical students who had likely never had such tea before. I hope I can inspire more people to get into gongfu brewing like this. Great teas like this one have the ability to change people's opinions about tea in general, and inspire others to start exploring the world of tea! Show Less
