y within these leaves which is worth diving deeply into, so buckle up & bear with me!
If I had to try to keep this review short and sweet: buy two bags and keep both in the fridge. Floral Pomelo is a unique rendition of the cultivar – with excellent citrus breadth & depth, a powerful minerality, sweet floral notes that linger, and a pungent aftertaste that is reminiscent of forest honey drizzled over lightly-toasted macadamia nuts. While I typically gravitate towards a deeper firing that pushes darker fruit & roast complexity forward, the lighter firing on the 2025 harvest was a genius move.
The deep dive: the 2025 harvest contains volatile sulfur compounds – often referred to as “polyfunctional thiols” in the literature – which seem to be present here in unusually high concentrations.
Volatile sulfur compounds are kaleidoscopic chameleons of flavor, and double-edged swords at the same time: they contribute significantly to the complex fruity notes found in mango, lychee, passionfruit, as well as pomelo, grapefruit, kumquat, and more – but if oxidized, these same compounds pivot sharply into pungent notes of sweated onion, garlic, and other deep funky notes.
Although I don’t know for sure, after four bags of this tea I’m willing to bet that 4MMP, 3MH and 3MHA are all in here (plus the usual terpene glycoside & oxide suspects).
Polyfunctional thiols are fleeting gifts from nature. Produced in tiny concentrations (parts per billion) and extremely sensitive to oxidation, they tend to be temporary traits rather than permanent features, and the fact they’re present in these leaves is a testament to both skilled processing and excellent grow conditions.
... and that’s also why you should keep Floral Pomelo in the fridge: so you can preserve the molecules which give it a level of depth seldom found elsewhere, even in the world of high-end oolong. Show Less

out the mesmerising quality of this tea, and as with all the other wonderfully detailed reviews you have posted here. Indeed, it is the traditional oolong processing step of "rattling the leaves" that triggers the activities of these thiols that gives the tea's wonderful aroma. The intensity, duration, resting time in between each repeated "rattling", humidity, and temperature, in addition to the gradual changes in these parameters throughout the processing added together to give this most desirable and at the same time, fragile balance of molecular make up that defines this tea that you have tasted. You are absolutely right to keep the tea in cold storage as we do, if you want to stretch the shelf life of this high aroma stage. Or, as with older dancong aficionados, let it grow old to have these complex group of sulphur biochemicals continue their chain reactions to form the deeper taste profile of a mature tea. However, do not try to attempt this unless you are familiar with such aging process. True tea is extremely fun, isn't it? Show Less

iring. It was clearly made with patience, and respect to the kinds of molecular transformations which occur slowly over periods of time… you cannot rush the development of the flavor profile with tea like this.
There’s a unique floral quality to this tea that reminds me strongly of high-end Tieguanyin. It’s pretty hard to miss – this isn’t nuanced as much as it is in-your-face - it greets you immediately and makes itself right at home on the palate. It’s thick and has the viscosity of frozen motor oil, yet there is a really soft and graceful charm to its presence that is addictive.
The flavors are all cohesive and sit comfortably on the palate, sinking heavily into the space between the teeth. It’s nice. The aftertaste reminds me of cinnamon-dusted apple chips – not too sweet, and the cinnamon notes add a complexity and vibrancy that is very enjoyable.
If Tea Hong’s Shèmen double-baked dancong is a bridge leading from Fenghuang to Wuyi, then this Cassia Extraordinaire is a bridge from Wuyi back to Fenghuang. Show Less

The roast on Cassia Classic is apparent but not taken too far - the flavors are still soft and slippery around the edges, with a smooth texture and oily viscosity to it.
The aftertaste is nice and long-lasting. The empty-cup aroma is great, there are clear notes of cinnamon bark with hints of tangy red fruits (I get hints of sour cherries and currants).
This is certainly a good option for somebody who wants to explore the intriguing world of Wuyi oolongs, or the more-seasoned connoisseur who just wants some good rougui that doesn't break the bank.
I like to use 7 to 8 grams of leaf in my 100mL "Rural Life" gaiwan, or roughly 10 grams of leaf in a 150mL yixing teapot. Short steep times with near/freshly boiling water make for a lovely experience. Show Less

The leaf quality is nothing short of exceptional, showcasing a caliber of Huangshan Maofeng that is a rare find in today’s market. Every stage, from plucking to frying, has been executed with a flawless precision that speaks volumes of the skilled craftsmanship involved. The meticulous attention to detail, from the delicate thin-red line at the leaf’s base to the uniform searing and blistering of the leaves, results in a tea that captures a spectrum of flavors seldom encountered in other examples.
The depth of flavors and the overall complexity here is something I would expect to find in an oolong. It is quite remarkable to me how much this green tea has going on.
It’s mildly nutty, with hints of cereal grains and mung beans wafting up off the wet leaf, but it’s also soft and floral, with a smooth mouthfeel and a creamy texture. There’s also some undertones of fresh thistle and pine needles, just enough to keep the flavor profile crisp and bright without losing any of its delicate qualities.
