The traditional style of baking Taiwan oolong is a vanishing art. That is one reason older connoisseurs are saying tea is not tasting like it used to. Indeed not many tea practitioners are doing it. One of them is Yu Wen, one of our Taiwan farmers. She is dedicated to bringing that heritage back in vogue. Taiwan oolong properly baked is healthier and friendlier to the stomach for everyone after all, and used to be what makes Cold Peak — Dong Ding — the quintessential Taiwan oolong — soft, sweet and with a warm, nectarous aroma.     Over a century of development since the cultivar’s transplant to Taiwan, tieguanyin produced in the beautiful emerald island is quite different from its cousin in China. Not only has the cultivar evolved differently, but also the continual local development of the authentic technique with which it is produced. Grown in the more conducive terroir of Muzha in the Wenshan area, the leaves here afford a deeper oxidation for a more complex profile even after the traditional deeper baking process.     A Wuyi reborn in Taiwan

    In Taiwan, besides the famous tea mountain of Dong Ding (Cold Peak), there are actually many other areas where the horticultural conditions are good for finer tea production. Such as the Bei Shan (i.e. North Peak) area that is has an 1,100m altitude and near the centre of the whole Taiwan Island, in Nantou County. The Tsai family does not have the resources to get an international organic certification, but they run the farm according to organic practices with the help of the local university, much like Master Yu who makes our GABA teas. Tea Hong’s North Peak is an oolong optimally deep baked for aroma and caramelisation. It is produced by the Tsai family using a Wuyi Shuixian cultivar that is localised and quite different from any Wuyi oolongs from Wuyi. You will find it softer and slightly sweeter.     Driving south towards Alishan from Yuchi*, the birthplace of black tea in Taiwan, along the mountainous road through emerald forests, in about two hours time, one can stop by a scenic local hideouts: Yunling*. Here, Master Zheng moves naturally through his stepped tea garden on the slope at elevation 1300m, despite his rather round body. One large patch of his farm is populated with a locally improved version of the Indian tea cultivar Jaipuri*. The whole leaf black tea that he produces using this plant tastes so smooth and delicate that one wonders why a similar thing isn’t found in Assam, where the original tea cultivar was transplanted from back in 1923. Maybe it is the beautiful sceneries here, or maybe it is the specialist tea craft, or maybe it is the culture of Taiwan, or maybe a bit of everything, that turns this immigrant plant into this friendly, smooth and yet intricately complex black tea, Tea Hong’s Misty Heights #8, while remaining that uniquely engaging maltiness that makes an Assamica popular.     Guifei Oolong from Cold Peak

    Guifei Oolong ( or Honey Concubine Tea, literally translated ) is a medium deep baked, medium oxidation ( 25 ~ 30% ) oolong produced from the Ruan Zhi cultivar in the Dong Ding ( Cold Peak ) area. It is different from the traditional Cold Peak oolong. The leaves of Guifei are bitten by green leafhoppers before plucking. The bug attack triggers a chain of biochemical reactions in the leaves that result in the complex honey notes that typify this tea. It was inspired by the way Oriental Beauty acquires its unique taste profile. However the two teas taste very differently through each’s own unique oolong processing approaches and pluck timing. The tea was invented after the devastation of an earthquake in September 1999, when the farmers had to create more revenue to rebuild their lost homes. «Read more» Baked to perfection by our producer the multiple award-winning tea master Chen Yu Wen, the current batch is certainly one of the best we have ever had from her. Taste profile

Nose: Warm, soft aroma carrying notes of dried fruits and with the overtone of the woods after rain. Hints of bouquet. Palate: Soft, slightly sweet infusion with accents of the dried fruits of plum, peach and apple. Supple, round body with silky tactility. Slight hints of cinnamon and licorice. Finish: Sweet aftertaste.

Infusion tips

This is a soft-tasting tea. As such, it withstands carelessness in infusion quite well. It is therefore a choice for some people as an infusion practice. For general drinking, if you are using a larger teapot, make sure you preheat the pot well enough and use infusion water at maximally 95°C. It can be more flexible in smaller infusion ware such as a gaiwan or an infusion mug.

The trickiest part is perhaps getting the right amount of leaves: it is an extremely tightly rolled tea and therefore deceivingly small in quantity before infusion. Use a scale if possible. In the event that you use a bit too much leaves, the tea would not taste too bitter or astringent, but rather dry and a distorted profile. Use a shorter infusion time and a higher temperature ( still below 95°C ) to adjust in such case.

  1. The roast on this Dong Ding is exquisite, and exemplifies what mastery in roasting is capable of achieving. This tea initially presents itself as being roast-forward, with the aroma of the wet leaf suggesting a charcoal-heavy experience awaits in the cup, but the broth itself is remarkably soft, round, and silky smooth all the way through, with very well-defined flavors that exist in perfect harmony with each other.

    It’s floral, it’s fruity, and it gets a bit nutty with hints of sweet roots & dessert spices (licorice and cinnamon), especially in later steeps, but all the way through the body remains very supple and oily. It resists turning bitter or losing clarity in its flavor profile, even after a very long steep in freshly boiling water it remains incredibly thick and each individual flavor remains well-defined. The aftertaste lingers for a while and mouthfeel remains complex long after the soup has been swallowed.

    The element which stands out most to me is just how sweet this tea is. It may be roast-forward in the aroma of the wet leaf, but it’s very much so sugar-forward in the cup, and all of the individual layers of flavor are held together by an element of sweetness that is pervasive across the tea, from the initial sip to the lingering sensations of the aftertaste.

  2. Very Well Done

    Often, roasted teas will be overdone. This is not the case with this one. The tea produces a nice floral aroma with a mellow sweet flavor of fruits and some nuttiness. The mouth stays wet and reveals a good body to the tea. Some huigan and mouth activity. Seems to strengthen after a few brews. Long lasting. A very solid tea that holds up repeatedly.
