While there are many shops and brands offering organic matcha, finding one which taste quality meets our high requirements is a challenge. In our product line structure, it has to be good enough for chanoyu and at the same time economic enough for making different daily drinks or other recipes. Tea Hong’s ceremonial grade Organic Matcha Unshin is sourced exactly for this purpose. Produced by the same team that gives our wonderful Ise Matcha Mugetsu, and harvested from an isolated tea field for organic management, we are so confident of its quality that this very same production was the first Japanese tea we wholesale exported to EU, and growing in volume ever since. We also have a special quality from this same producer to provide to premium hotels in EU and UK.

Always return unused portion into the fridge.
To keep cold storage tea better to maintain its quality, always try to minimise the amount of air inside the bag before making sure that it is airtight. Gently shake the remaining tea powder downwards towards the bottom of the bag and then squeeze the bag from the volume of the powder towards the bag opening. Immediately after the fingers pass the top of the volume, tighten the bag there.
To tighten the bag, use either a simple “butterfly” clip, or a “sealer” clip. If you use the butterfly clip, always make sure that there are at least three folds of the bag before clipping.
To use the cold stored tea again, always make sure the content of a pack returns to room temperature before opening the pack.
Preparation suggestion
Choose a tea bowl which base can fit well into your palm, and one that is thick enough to hold the heat for the during of the whisk.
- Preheat the bowl with near boiling water
- Add 2g of matcha into the bowl through a sieve and about 1.5 tablespoons of room temperature water
- Blend the tea powder well with the water to make a consistent paste
- Add 80ml of water at 85°C
- Whisk using a zigzag movement (rather than circular) to blend the tea well into the water
- Enjoy
- Alternatively, blend this into foamed milk, either hot or cold, for a matcha latte, possibly a lot better than whatever you can get from the best café in town

Taste profile
Nose: Creamy, savoury notes on a herbal, yet roasty undertone. Palate: Rich foam that is silky smooth. Creamy notes. Umami with a biscuity overtone. Tinkles of herbal and bitter bites. Finish: Refreshing, savoury and paced tints of sweetness.
