Tea Hong’s Most Bouquet Wuyi Oolong
Great discipline in the use of fire distinguishes Cassia Extraordinaire from most other Wuyi varieties with a supple, deliciously floral and delicate scent balanced with a full, lively body. Thanks to this masterful baking, this lighter style Wuyi oolong keeps well and improves with extended storage, as it should traditionally. This is our most “bouquet” style Wuyi oolong, being on the other end of the scale as the deep baked classic style Cassia Classic or Red Cloak Grande in Tea Hong’s proud Wuyi repertoire.

Taste profile
Nose: Flowery aroma with distinctive fresh cinnamon notes and elegant pitches of fresh herbs. Palate: Lively infusion of malty long taste and mild citrus bites. Refreshing high notes of herbs. Finish: Aftertaste of apple and malt.
Infusion tips
Great to enjoy it light, but much better when it is well infused to full strength either in conventional or gongfu approach. Use 90°C water to begin with. If you think it is too soft or if you want more aroma, increase the temperature maximally to 95°C.

Centenary Bush Dahong Pao:
The most revered amongst all Wuyi oolongs, Da Hongpao (translate: Big Red Cloak) from the pure pedigree grown in better horticultural environment mean significant difference and are most sought after. Tea Hong’s Red Cloak Grande is an extremely limited production (10 kg/year) harvested from two second generation noble breed that are over 100 yrs old in the heights of Wuyi. Masterfully processed to best deliver the taste this name represents.

Browner Style Zhenghe Dabai:
Those who prefer white tea as their daily drink but want a bit more stimulations in taste, White Peony from Zhenghe is a great choice. It is air withered for a longer duration from one of the two classic cultivars, Zhenghe Dabai. The resultant tea tastes slightly sharper and longer than white teas produced from the other classic, Fuding Dabai. White Peony Zhenghe is a fine tea that is most affordably priced.

Dark Rock Shuixian:
This tea may have the same name as some low quality tea used in dimsum restaurants but it certainly tastes differently. It is the ORIGINAL Shuixian, the famous oolong that grows on dark rock cliffs in the depth of Wuyi Mountains. Narcissus Classic, like most other deeper baked oolongs, goes well with a wide range of cuisines and desserts and is a great digestive. Also an adaptable tea for preparation with other ingredients, such as ginger and raw sugar, and a safer tea for the weaker stomach.

Snow Orchid, bouquet Phoenix dancong oolong

This is a very good example of a lightly-fired Wuyi oolong, one that doesn’t sacrifice the depth of body achieved through proper firing. It was clearly made with patience, and respect to the kinds of molecular transformations which occur slowly over periods of time… you cannot rush the development of the flavor profile with tea like this.
There’s a unique floral quality to this tea that reminds me strongly of high-end Tieguanyin. It’s pretty hard to miss – this isn’t nuanced as much as it is in-your-face – it greets you immediately and makes itself right at home on the palate. It’s thick and has the viscosity of frozen motor oil, yet there is a really soft and graceful charm to its presence that is addictive.
The flavors are all cohesive and sit comfortably on the palate, sinking heavily into the space between the teeth. It’s nice. The aftertaste reminds me of cinnamon-dusted apple chips – not too sweet, and the cinnamon notes add a complexity and vibrancy that is very enjoyable.
If Tea Hong’s Shèmen double-baked dancong is a bridge leading from Fenghuang to Wuyi, then this Cassia Extraordinaire is a bridge from Wuyi back to Fenghuang.
Stunning & memorable (2011 version)
This is an outstanding tea that is unlike and better than any other Wuyi oolong I’ve tasted (with the possible exception of Tea Hong’s Sacred Lily). It infuses forever, and somehow manages to display lasting aromatic characters alongside power and intensity, but with no element dominant and no intrusive charcoal. Every mouthful is pleasurable. It’s worth every cent.
Excellent Tea
Good orchid aroma with a clear floral and cinnamon flavor. Good huigan, body, and thickness in the mouth. Smooth, slightly sour taste which is extremely pleasant. Short gongfu brews produce depth of flavor, revealing layers of mineral and sweet flavors. One of the best Rou Gui’s I’ve ever had.
What a stunning aromatic oolong
I just prepared gongfu style a sample that I got for my business in Chile and I needed to write about it: what a wonderful aroma comes out from this tea. It’s made me feel like the famous Lu Tung’s quote “I am not interested in immortality, excepting for the taste (smell must I say) of tea.”
My most expensive tea ever, and loving it!
I should have written about a few other oolongs I tried since my happy experience with Phoenix Bittersweet, but I have to share with you this one. This is the most expensive tea I have ever bought and so pleased with it. It has a great sweet wood taste and a very interesting spice to it. Not hot or pungent or anything like that, but very memorable character. Warm, refreshing aroma and very tasteful tea. I have stopped alcohol for 6 years now, this tea is like a very fine wine, except that this keeps me sober and feeling healthy 😉
