  • Shèmen Dancong Double Baked, Phoenix dancong oolong

    This is old style dancong for sure. It’s amazing to me that such a vivid and apparent transformation in the flavor profile is captured as flawlessly as it is here, with so much nuance and clarity between the crisp high notes and the ultra-smooth body.

    On the initial sip, a powerful sensation grips the tongue and creates a lively mouthfeel that has rocky minerality to it, but is not metallic. Within a matter of seconds after swallowing the soup, this strong minerality melts away and reveals a beautiful symphony of flavors, all perfectly orchestrated and seemingly emanating out from that rocky minerality.

    Maybe that’s what “music from the rock” means – and if so, this is a brilliant example of a rare quality not found in many dancong nowadays. More modern processing techniques are not focused on bringing such a characteristic out, and while they can be good overall, they can also be lacking yan-yun entirely.

    The way the mouthfeel builds progressively is beautiful – so many layers of flavor are possible to explore because this tea has such a deep and round body. I get overt undertones of plums, lychee, almonds, and a kind of spice that is reminiscent of toasted coriander seed, plus all kinds of subtle sensations like licorice root and citrus fruits, some of which sparkle on the palate and feel electrifying, and others which weave in and out so softly they are barely detectable, yet so refined once I sense them.

    This is glorious. What a rare and complex experience. If you want something special; not only in its flavor profile, but also for the tradition it represents, and the nearly thousand-year-old history it perfectly exemplifies, then this is definitely the right choice!

  • Premodern Peony, deep oxidation white tea

    My first order has arrived. The first tea I tried was this Peony. Hence my first review.

    This tea is a revelation. I’ve prepared commercial-grade white peony from a local teas shop, as well as other Chinese whites, and they tend to pleasant but one-dimensional; that familiar woody taste, but not much more. This peony has a full, round, complex flavour, as described above, making it much more interesting than the common whites. I can never go back to “modern” peonies now, let alone post-modern ones 🙂

    2g/100ml/90°C/1,5min is a good starting point, with first a quick hot rinse, as I learned elsewhere on this site.

  • Hong Yu Deep White, deep oxidation Taiwan white tea

    Glad you like the tea. Indeed a quick wash can already render a pleasant feeling. However, as responded previously to your other comments, a longer steep does render a more complete profile of a tea and will bring a wider horizon to the appreciation and enjoyment of it, and the world of tea at large. Do let us know how you do in your journey in this direction.

    I am amused

    @Patricio I am amused to read this review. I can sense the fire in your belly when you wrote this. To express openly one’s feelings of a product in an internet shop is a virtue that I hope will gradually grow in more people. Some of our customers may want to maintain a low profile. Some maybe too busy.

    A lot of common efforts is still needed to build awareness and appreciation in the market for fine tea of this quality level. Consumer comments and reviews definitely mean immense help. They are also morale boosters to us here. I am happy that you like the tea. I have worked hard in order to get this kind of quality.

  • Mini Peony, matured white tea

    Aroma-evoked memories

    As a child, my summer mornings were often spent in an open field, examining nature’s tiniest details. Mini Peony takes me back there with its tourmaline-yellow liquor and light, fresh aroma of purple clover, daisy and Queen Anne’s Lace. There’s also an herbal scent reminiscent of the sticky milkweed pods I would pull apart to examine. The infused leaves of this tea are a pleasant tangle resembling pea tendrils. Compared to the other white teas I’ve tried, Mini Peony is brighter and softer in taste with a surprisingly round, smooth and substantial texture. If only I could lift the lid off my gaiwan to hear birdsong and buzzing cicadas, my childhood flashback would be complete.

    Superb in every way

    When you are in a perfect space and require a perfect friend this has to be it. This is so refined that the do not disturb sign has to be on the world until every last drop is tasted. You and the eight immortals will become one.
