Genuine Yòu Huāxiāng — Fragrance of Pomelo Blooms — is not an easy to offer variety of dancong simply because it takes not only skills and experience to produce well, but also another key factor that is impossible to control — the weather. Ample sunshine before and after the harvest for proper sun-withering is critical for forming its unique, and mesmerising, aroma and palatial accents that echo the tea’s legendary pomelo and honey floral characters. Baxian Supreme:
This Fenghuang Dancong is rare in many ways. It is the best Eight Immortals we have tasted, including award winning ones. Not only is it mild but flavorful like a good Baxian should be, but also gently and yet persistently fragrant. The baked finish is optimise for depth in taste. This gives side benefits for friendliness to the weaker stomach as well as the potential for maturity. Not an easy task for making a bouquet style Phoenix oolong. Master Lin who grows this is a shy and mild person and an old friend. We could not be offering it at such great value otherwise.

Xue Pian Yu Lan Xiang
One of the most common practices in tea naming in the Fenghuang region is giving a tea the name of the flower which the farmer associates the aroma with. Some of such flowers are fictitious, yet some are real. Like this one, Yu-lan, after the flower tree Magnolia denudata, a.k.a. Yulan magnolia. Jade orchid — as the name "Yulan" is translated — is a tree native to the region where Phoenix is. The tea cultivar itself is relatively new, having been developed locally by a farmer Wei Li Man in the 1980’s. That is why the more popular name for the plant itself amongst local farmers is Li Man zhong, or Li Man’s cultivar. To me, the winter harvest resembles the flower’s aroma more closely so we select only this for Tea Hong’s Jade Orchid. From the same small farm that produces our beloved Danhu Old Bush Song Cultivar, old Master Lin tends three venerable bushes that his father planted in his youth, now about 80 years old, crafting from them a seductively fragrant Zhilan Xiang. As a dancong bush gains age in its natural environment, the tea from its leaves has the potential for greater complexity taste and aroma. This is a distinctive trait of this oldest form of oolong. That is one reason harvests from older bushes are keenly sought after by connoisseurs. For a bouquet dancong, however, achieving perfection depends not only on the terroir and the mastery of processing but also on the precise weather and leaf condition at harvest. Unlike classic dancong, where there are a few more steps in which the tea master has some room to compensate for less-than-ideal circumstances, the fewer steps and shorter time in bouquet-style processing has less margin for error note. That means some years are distinctively better than others. That is why for a harvest as nearly perfect as this one, it is a blessing.

Huangzhi Xiang Dancong:
Song pedigree tea cultivar Huangzhi Xiang distinguishes itself from others of the same name not only by its living ancestor that has been carbon-dated back to the 13th century (late Song), but also by the elegantly complex taste and aroma of the tea it yields. That is why it is the most revered of all Phoenix oolong in its own origin and at the nearby Gongfu Tea Capital of the World — Chaozhou.

Taste profile
Nose: Warm, distinctive frontal floral aroma with a buttery, baguette undertone. Prominent accents of honey and citrus peel. Tints of cloves and other spices. Palate: Creamy smooth mouthfeel. Full, round body. Fruity overtone of bouquet, dark honey, fresh breadcrust, and butter. Prominent accent of sundried pomelo peel. Undertone of wood, nuts and dried fruits. Tints of grape and apple vinegar. Finish: Long, mouth-watering savoury bouquet with tints of almond.
Infusion suggestion
Although this is a relatively easy dancong to prepare using the standard 1~ 2g per 100ml ratio for a standard 5 to 6 min infusion duration, the tea can deliver an even more enticingly seductive taste experience when steeped using a 7g to 100ml in a small vessel (80~200ml) with a short duration, starting with at least 30s in the first round. Blanching with the same temperature water as infusion is a must when using such “gongfu” brewing style. 90°C is a good temperature when you begin learning about this tea. Go slightly higher, to 95°C max if you are an old tea nerd like me.
Storage suggestion
The extra light baking we have given to this tea has made it easier to store in room temperature. However, it is still advisable to put it in the fridge after opening if you do not plan to finish the pack in a couple of weeks. As always, minimise the air inside the container, but not vaccuum pack, and make sure it is always air and light tight.

White Peony Classic Long, traditional white tea

Zhenghe Mudan Wang
While White Peony from Fuding tastes more floral, that from the other earliest region, Zhenghe, tastes longer and deeper. The more tedious curing process is marked by the darker colors on the leaves. While many prize Silver Needle Supreme for its delicate taste and furry appearance, a superb traditional white tea as White Peony Classic Long delivers a more impressive taste experience. That may explain why this Mudan Wang, aka King of White Peony, is considered the best and most classical representation from the origin, and a favourite by many tea connoisseurs. As most aficionados prefer it, we have always matured this tea adequately before releasing it in the shop. The current stock is a single batch first flush ( i.e. pre-Qing-ming ) that we have matured in our environment since its harvest in 2019.

A quintessential traditional pre-rain green tea
Huangshan Maofeng green tea is a must-have souvenir when one visits Huangshan. However, even if you know the way to real teashops rather than tourist traps, a pack of such quality as Tea Hong's Cuiyu would come at a high price. That is why this pleasant tasting and slightly sweet baked green tea is a most popular item not only for our retail, but also export. To maintain consistent high quality, we employ only harvest before the lunar almanac demarkation of “guyu” — the first rain for seeding, around early to mid-April. "Yuqian" — before the rain — is the traditional term for this.

Classic Rougui Cultivar
Cassia (Rougui) was the first tea variety that received popular praise in the recent few hundred years from the Wuyi region. Named after the tree bark spice, there is otherwise no biological relationship at all, although there is an aromatic component in the oolong that is akin to that of the spice. This classic version is a bit deeper baked than the supreme “Extraordinaire” version, as has traditionally been done for the past century, or longer. Tieguanyin Floral, bouquet oolong

A very fragrant Jin Guanyin
While some people like their Tieguanyin subtle and long like it used to be traditionally, some others want it to be more floral. So we give you Tieguanyin Floral, a very bouquet version of this popular oolong. The cultivar is Jin Guanyin ( aka Golden Tieguanyin ), a child between the traditional Tieguanyin plant and a relatively newer bleed, Huangjin Gui *. While the latter is widely used as a substitute for the genuine Tieguanyin for its pleasing nose, it lacks the body and length of the real thing. The resultant hybrid, however, has the best of both parents. The terroir is in Xianghua, a mountainous area in the Anxi county in the subtropical southern part of Fujian, where the best Tieguanyin is produced.
