Bamboo basket charcoal rebaked
We have matured this special batch of tieguanyin for long enough before double baking it the traditional way in a bamboo basket with charcoal ash. To attain an ideal result from this traditional practice requires proper conditioning and in-depth know how. Tieguanyin Classic is one of Tea Hong's best value oolongs. Enjoy the warm, soothing aroma as hot water touches the leaves. Then the characteristic tastes of a classic tieguanyin delivered in a round, smooth body with a unique sweetness. If a traditional style sencha is a little too brisk for you but you feel needing a bit more zest than a gentle gyokuro, try a kabusecha — a tea made from shaded grown bushes much like a gyokuro, although shaded only for half the time. That gives you less of that extra umami, and relatively more of those tea polyphenols for that slight bite and a little more refreshing sensation that you maybe after. Tea Hong’s Kabusecha Gyousei is a top quality selection of this variety. It is produced by Yoshie san’s farm, the same that gives us Ise Gyokuro Mugetsu. Their farm is one of the best in that region, which is popular in the tea trade for shaded grown tea for the production of gyokuro, kabusecha and tencha for producing matcha.

Before Chaozhou Guest Hotel was privatised, this officially appointed lodging for visiting high-ranking government officials used to serve only classic style Phoenix oolongs in all of their restaurants*. Tea Hong’s Phoenix Classic could well be the special quality in the large white porcelain teapot on the breakfast table sitting next to bamboo steamers holding finely crafted dim sums for the privileged guests. All fine and quintessential characters of the classic Phoenix oolong can be found in this tea — Sweet, fruity, and lively with notes of peach and dried longan, lychee and sweet potato. A proud heritage of Guangdong oolong.

Xue Pian Yu Lan Xiang
One of the most common practices in tea naming in the Fenghuang region is giving a tea the name of the flower which the farmer associates the aroma with. Some of such flowers are fictitious, yet some are real. Like this one, Yu-lan, after the flower tree Magnolia denudata, a.k.a. Yulan magnolia. Jade orchid — as the name "Yulan" is translated — is a tree native to the region where Phoenix is. The tea cultivar itself is relatively new, having been developed locally by a farmer Wei Li Man in the 1980’s. That is why the more popular name for the plant itself amongst local farmers is Li Man zhong, or Li Man’s cultivar. To me, the winter harvest resembles the flower’s aroma more closely so we select only this for Tea Hong’s Jade Orchid. This tea is also available in a small portion as a part of Tea Taster’s Box: Nine Oolong Samplers.

Pre-Qingming Maofeng:
Huangshan (translate: Yellow Mountain) is an UNESCO World Heritage Site and a China national conservation. Besides beautiful sceneries, it is also the origin for many a fine teas, such as Huangshan Maofeng. The tender young leaf shoot to make Tea Hong's Huangshan Maofeng Supreme is always plucked with one or two tiny immediate leaves before Spring Equinoix, and always before Qing Ming. Always from the few small family tea farms in the high mountains that we buy from. It is a rare quality even in the market in Huangshan, and if you ever found it, would be at a much higher price. Working directly with producers is a principal at Tea Hong. While offering quality at a reasonable price is one immediate benefit that you as a consumer can enjoy, there are more important reasons and not so immediate results that we aim at. Huangzhi Xiang Dancong:
Song pedigree tea cultivar Huangzhi Xiang distinguishes itself from others of the same name not only by its living ancestor that has been carbon-dated back to the 13th century (late Song), but also by the elegantly complex taste and aroma of the tea it yields. That is why it is the most revered of all Phoenix oolong in its own origin and at the nearby Gongfu Tea Capital of the World — Chaozhou.
